What a Ham Salad
Makes 6 to 8 servings
What a ham . . . salad! This classic salad concoction gets additional personality from its curry-infused mayo, a kick of horseradish, and lemon juice.
1 teaspoon curry powder
1/2 cup mayonnaise (I love Blue Plate)
3 cups 1/4" diced cooked ham (about 1 pound)
1 heaping cup thin-sliced scallions (white and green parts)
1/4 cup sweet pickle relish (organic best)
2 heaping tablespoons prepared horseradish
1 tablespoon Creole or Dijon mustard
1 tablespoon fresh lemon juice
1 teaspoon sugar
To serve, as desired: Beefsteak tomatoes, buns, lettuce
Minced parsley for garnish
Mix curry powder with mayo, set aside. In a large bowl, combine ham, scallions, relish, horseradish, mustard, lemon, sugar. Add curry mayo, stir thoroughly.
Chill for 2 hours, or more, before serving, in hollowed-out tomato "bowls," on party buns, or a bed of dressed lettuce and tomatoes.
