Tuna Casino on the Half Shell

Makes 12 servings


Pro Tip: 4-inch scallop baking shells can be bought online


5 slices thick-cut bacon, cut crosswise in 1/4-inch strips

1/4 cup red onion, minced

2 cloves garlic, minced

1 green bell pepper, minced

Juice of one lemon

2 pounds good quality fresh tuna, cut in 36 (3/4-inch) chunks

Freshly ground pepper


Heat oven to 425°F. Spray 12 baking shells with cooking spray. Place on cookie sheets.

In medium skillet, over medium-high heat, cook bacon till slightly browned but not crisp, about 5 minutes. Set bacon aside, reserving one tablespoon fat in pan. Over medum heat, cook onion, garlic and green pepper till softened, about 5 minutes. Return bacon to pan, add lemon juice, cook 2 minutes. Add freshly ground pepper to taste.

On 12 baking shells, place three pieces of tuna each. Spoon pan mixture gently onto each shell with tuna.

Bake 8 minutes till tuna is heated, serve immediately.
