Ron Glass' Bombay Chicken

Ron Glass was best known as Detective Ron Harris on Barney Miller (1975-1982). In 1992, he also played Lieutenant Hanrahan in Murder, She Wrote's "Incident in Lot # 7" (the "Psycho house" episode).


Here is Ron's (I'm told) quite good Bombay Chicken recipe. It was famously tested by one Mr. Rathbone, HERE, a home cook aficionado and follower of my brilliant friend and renowned author, Jenny Hammerton, of "Murder, She COOKED," fame. Here's Mr. Rathbone's exclusive (and delicious!) photo of the dish.

Ron Glass' (Detective Harris')

BOMBAY CHICKEN


10 to 16 pieces chicken (breasts, thighs, and legs)

1½ cups prunes

1 3-ounce jar green Spanish olives, rinsed

1/2 cup olive oil

½ cup red wine vinegar

1 4-ounce can capers, rinsed

Black pepper to taste

1/4 teaspoon cayenne pepper

(use cautiously)

6 cloves garlic, finely chopped

Basil

Oregano

1 cup white wine


Place the chicken in a baking pan with the next 10 ingredients. Cover and marinate in the refrigerator overnight. Preheat the oven to 400°. Just prior to cooking, add the white wine. Bake, uncovered, for 1 hour or until done.


Serving suggestion: Serve with polenta or rice.


Makes 4 to 6 servings.
