Here's my new and fun-to-make (and tasty to eat!) pan con tomate recipe for your dining enjoyment. Let me know what you think in the comments!
Pan con Tomate (Spanish Tomato Bread)
Makes 6 servings
3 large tomatoes, cored and halved
3 cloves garlic, minced
1 teaspoon sugar
1/2 teaspoon salt, or to taste
6 slices miche or other rustic bread, 3/4 to 1-inch thick
Extra virgin olive oil spray with garlic
Coarse salt to finish
Into medium bowl, grate tomatoes. Discard (or compost) skins. Stir in garlic, sugar, salt. Chill, covered, for at least an hour before next steps.
Line a half sheet pan or other baking sheet with foil. Arrange bread, spray with garlic olive oil, broil 2 to 3 minutes till edges charred. Remove from oven, adjust to 300°F.
Spread tomato mixture evenly over toasted bread, heat 12 minutes. Sprinkle with coarse salt to finish. Serve immediately.
