Monster Mash

Easy to whip up, nutritious to eat, these mashed potatoes with vegetables in eerie Halloween colors will add supernatural spirit to your table for the holiday! If you have extra vegetables remaining, turn them into a spooky side slaw - toss with a bit of vinaigrette or other favorite dressing! Now, get cooking! If you dare . . . 🎃

Monster Mash

Makes 6 to 8 servings


2 packages (4 oz each) instant mashed potatoes (like Idahoan Buttery Homestyle)

Small head red cabbage (purple in color), sliced in thin 1-inch strips

4 ounces black olives, sliced

5 ounces pimento-stuffed green olives, sliced

2 large or 3 medium carrots, shredded


Slice/shred all vegetables. Prepare potatoes per package directions. Reserving a bit of the vegetables as garnish, fold the rest into hot potatoes. Place the Monster Mash in your spookiest serving bowl, decorate with reserved vegetables. If you have any picky eaters, you can make more than one batch and switch up the vegetables you add to each!
