Luscious Liptauer Cheese Dip
Makes enough for a 16 person party
Liptauer cheese is a traditional Slovakian/Hungarian treat. My recipe keeps the chives, parsley, caraway seed and capers, skips the paprika (a bit unorthodox but avoids an orange tint) and adds sour cream and lemon juice for a peppy tang. Serve this luscious dip with celery and bread sticks, pumpernickel cocktail breads (which go great with the caraway flavor of the dip), and other veggies like multi-colored bell pepper.
8 ounces cream cheese, softened
8 ounces full fat sour cream
2 ounces European butter (like Kerrygold), softened
1/4 cup minced fresh parsley
1 heaping tablespoon capers, drained
1 heaping tablespoon fresh or dried chives
1 heaping tablespoon instant diced onion
1 tablespoon caraway seed
1/2 teaspoon mustard powder
1/4 teaspoon garlic powder
1 tablespoon fresh lemon juice
To medium bowl, add all ingredients. With wooden spoon, thoroughly combine. When all the butter is incorporated, you're done, about 5 minutes.
Cover and refrigerate 3 hours to overnight so onion and chives can soften and flavors can blend. Let stand 30 minutes before serving.
