Judy Garland's Ham Casserole with Sherry

Ham yourself a sherry little Christmas.

Judy Garland's Ham Casserole with Sherry

Serves 6 to 8


4 cups ground cooked ham (I would cube this, not grind it)

2 cups cooked rice

½ cup heavy cream

2 eggs, well beaten

2 tomatoes, peeled and chopped

2 tablespoons diced green pepper (I would dice up an entire green pepper)

1 tablespoon grated onion (I would dice an entire small sweet onion finely, not grate)

1 teaspoon prepared mustard (I'd use 2 teaspoons)

1 teaspoon Worcestershire sauce (I'd use a tablespoon)

½ cup sherry wine (I'd use 1/3 cup)

¾ cup bread crumbs

1 tablespoon butter, melted (I'd use 5 tablespoons to 3/4 cup bread crumbs)

½ teaspoon paprika (I'd use 1 1/2 teaspoons unless it was the hot variety)


Preheat oven to 350 degrees.

Combine the ham, rice, cream, eggs, tomatoes, pepper, onion, mustard, Worcestershire sauce, and sherry. Mix well and transfer to a greased two-quart casserole dish. (I would throw a bit of canola or a tablespoon of butter in a skillet over medium heat and brown the ham for a few minutes, then set aside. To same skillet I would add another bit of oil or butter then sauté the onion and green pepper for about 5 minutes till softened, stir in the tomatoes and sherry, cook off about half the liquor, then stir in the mustard, Worcestershire, and cream. I'd let the mixture cool then stir together in a large bowl loosely with the ham, rice and eggs. THEN I'd transfer mixture to the greased casserole dish.)

Mix the bread crumbs, melted butter, and paprika, and sprinkle on top of the ham mixture.

Bake 45 minutes.
