Green Pepper Steak is a girl's best friend?
Editor's note: There are numerous similar versions of this recipe I've seen, from various sources. The one below is from cookeatshare.com and I have re-written it to reflect current recipe conventions.
Jane Russell's Green Pepper Steak
Serves 4
2 tablespoons olive oil
2 pounds top round steak in 1/2" strips
2 green bell peppers cut in thin strips
2 onions coarsely chopped
2 cloves garlic minced
8 ounces mushrooms sliced
1/2 teaspoon freshly ground black pepper
2 teaspoons salt
1 cup red wine
1 teaspoon curry powder
3 or 4 cups of beef or chicken broth (optional)
Cooked rice
To a large skillet, add olive oil. Brown steak. Add green peppers and onions and continue to sauté/fry till vegetables are tender. Add in garlic, mushrooms, black pepper and salt, cook 2 more minutes. Add wine, cover, cook over low heat for half an hour. Stir in curry powder, continue to simmer 1 1/2 hours. If more liquid is needed, add broth. (Editor's note: chances are good it will be.) Serve over rice.
