Biscuits meet gumdrops in my newest sweets creation! Inspired by Gumdrop Mountain Pass in the classic Candy Land board game, the buttermilk and salt of the biscuit are a wonderful complement to the spice of the candies.
I hold back the lighter colors, as the red, green, orange, and purple contrast better with the biscuit dough. (Have a “yellow and white” party and feed the rest to your guests.) Each biscuit can be an art project as you make sure they have a variety of gumdrop colors on top.
Gumdrop Mountain Biscuits
Makes 32 to 40 cookies
3 cups unbleached all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
1/2 cup granulated sugar
1/2 cup dark brown sugar
1 egg
1 tsp vanilla
1 cup buttermilk
2 1/2 to 3 cups multi-colored spice-flavored gumdrops (start with 2 pounds and remove yellow and white)
Line two large cookie sheets with parchment paper. In medium bowl, whisk together flour, baking powder, baking soda, salt.
In large bowl, beat butter and sugars till fluffy, beat in egg and vanilla. In two batches, beat flour mixture into sugar mixture till blended. Beat in buttermilk.
Refrigerate dough 30 minutes.
Heat oven to 350°F. On prepared cookie sheets, place 1 inch balls at least 2 inches apart, they do spread. Bake for 6 minutes, remove from oven and, working quickly, lightly push 3 different colored spice drops right into the center of each biscuit. Return to bake for 10 more minutes or till edges are golden.
Let cool 15 minutes. Store in airtight container. Pro tip: add about a dozen jumbo marshmallows in container with biscuits to keep them soft.
