Grim Reaper Chopped Salad

Makes 4 to 6 servings

1 pound (about 20) shelled and boiled shrimp, tails removed

3 cups romaine lettuce in 3/4-inch strips

1 cup halved grape tomatoes

1 cup haricots verts, cooked and cut in 1-inch pieces

1 orange bell pepper, diced

1/2 cup finely chopped red onion

3/4 cup crumbled blue cheese (3 ounces)

1/2 cup fresh basil in thin strips

1/4 cup red wine vinegar

2 tablespoons fresh lemon juice

2 teaspoons salt

Freshly ground black pepper

1/4 cup olive oil

In a large bowl toss shrimp, lettuce, tomatoes, haricots verts, bell pepper, onion, blue cheese, and basil. Whisk together vinegar, lemon juice, salt, pepper to taste, then whisk in oil.
