Great Pumpkin Hummus

This one is a KHOU Great Day Houston (and now website) exclusive. You won't see it in my best-selling cookbook, however my book has, of course, a frightful number of other great Halloween recipes for you to stir up in your cauldron!

Great Pumpkin Hummus
Makes about 24 servings
1 (15 ounce) can chickpeas, drained
1 cup canned pumpkin purée, or puréed pumpkin guts (no seeds)
½ cup tahini
¼ cup apple cider vinegar
2 tablespoons extra-virgin olive oil
Juice of one lemon
2 tablespoons fresh sage leaves
1/2 teaspoon ground cumin
1 teaspoon coarse salt
Toasted pumpkin seeds, for garnish*
Paprika, for garnish
In food processor, one or two ingredients at a time if your machine is small, blend everything except seeds & paprika till smooth. Stow in the fridge for 3 or 4 hours for flavors to combine. Even better the next day! Garnish with seeds and paprika. Serve with pita chips or crudités.
*Heat oven to 350°F. On cookie sheet, spread seeds. Spray or brush with olive oil. Sprinkle with garlic powder, salt and pepper, paprika. Roast 15 minutes, tossing them every 5 minutes for more even roasting.
