Here, from approximately 1955, we have Betty's recipe for banana loaf! Now, chances are she never cooked this up herself, as she was famously kitchen-averse. But it looks like it just might work! Shake it, Betty!
Betty White's Easy-Slice Banana Loaf
Makes 1 loaf
Besides 2 cups sifted FISHER'S BLEND FLOUR, you'll need
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 cup sugar
1 cup mashed, ripe bananas (2 large)
1 egg
1/4 cup milk
1/4 cup melted shortening or salad oil
1/2 cup chopped walnuts
1 teaspoon vanilla
Set oven for 350
Stir together sifted flour, baking powder, baking soda, salt and sugar in mixing bowl. make hollow in center; add mashed bananas, egg, milk, shortening or salad oil, walnuts and vanilla.
Stir only until all dry ingredients are moistened. Spread into greased and floured 5x9x3-inch loaf pan. Bake 50 minutes or until done. remove load from pan and let cool on cake rack. Wrap in waxed paper before storing.
