A traditional, and ambrosial, shower party (and year-round) classic. I don't put coconut in mine, but you can! Just stir in about a cup of shredded sweetened coconut. Scroll all the way down for my appearance on New Orleans TV making the recipe for Mother's Day 2021!

Ambrosia Salad
Makes 8 servings
1 1/2 cups green grapes
1 can (11 ounces) mandarin oranges, drained
1 jar (10 ounces) maraschino cherries, drained and patted dry
1 can (20 ounces) pineapple chunks, drained
1/2 teaspoon grated lemon zest
1 cup heavy cream, beaten to stiff peaks
1 tablespoon sugar
1/2 cup mayonnaise
1 cup mini marshmallows
In medium bowl, combine grapes, oranges, cherries, pineapple.
In large bowl, combine sugar, mayo, lemon zest. Stir to dissolve sugar. Fold in whipped cream, marshmallows. With slotted spoon, add fruit, fold just to combine.
Transfer to 2-quart dish, freeze for 1 hour before serving.
